Why it's on the Slow Food Ark of Taste This vinegar is not only produced in
the traditional Orleans Method, it's created from heirloom Gravenstein variety
apples, both of which are listed on the Slow Food Ark of Taste.
Growing in California since the early 1800's, Gravenstein apples were
enormously popular around 100 years ago but have lost their farming acreage to
California vineyards and the less delicate Red Delicious apple that ships and
stores with less care. It has been prized for years among pastry chefs for its
dense, crisp texture and balance of sweet and tart flavors.
The Orleans Method vinegar production was developed in France around 200 years
ago. It is so rarely practiced as today's technology allows vinegar to be
force-fermented in a few short hours with blasts of oxygen. These methods lose
out on the full-bodied taste and nutritional benefits of the traditional
Orleans Method vinegar. This honey-colored elixir isn't ready to hit your table
until it has been hand crafted on the Katz family farm and aged in 55 gallon
oak barrels for at least a month. Good things come to those who wait.
Health Benefits For hundreds of years, apple cider vinegar has been known to
promote weight control (nice!), aid with digestion, lower blood pressure,
improve memory, and ease arthritis. On top of this, vinegar produced in the
Orleans method is ahead of your normal grocery store vinegar because the oak
barrel-aged process retains more of the beneficial minerals of the vinegar.
Around the Katz's farm, every afternoon Albert and his wife stir up a
tablespoon of this delicious, barrel-aged Gravenstein Apple Cider Vinegar, a
tablespoon of local honey, and a tablespoon of warm water to keep the doctor
away. It's the classiest version of an your "apple-a-day" superfood
that we've ever seen.
