Uses
We personally like these nutty-flavored, colorful beans to
stand on their own with some of the seasoning ideas we mention below, but we’ve
heard their texture stands up beautifully in soups too. After they’ve been
soaked and simmered in some salted water we like to:
- Combine them with sautéed garlic and fresh chopped parsley (this
is the favorite preparation of our friends at Zursun)
- Stir them in with some caramelized onions and smoky lardons
- Use them as the colorful, hearty filling for vegetarian
tacos
