Pacific crabapple trees native to the western U.S., or Malus Fusca, have been prized for generations for their acidic, naturally pectin-y fruit and their bark, which has medicinal properties. Damson plums are not native to the U.S., but they are a beautiful heirloom that was originally cultivated by the peoplw of Damascus, Syria, hence the name Damson plum. Like crabapples, they are often found to be too tart to eat right off the tree, but this acidity makes them perfect for jams, liquors, and in this case and delectable fruit butter! A fruit butter is different than a jam or marmalade because the skins and seeds are removed from the fruit and it is cooked slowly until the fruit caramelizes slightly and turns to a buttery-like texture rather than being cooked for a shorter period of time with a little more sugar. </span><br><br><span style="font-size: 10pt;">The Blue Chair Fruit team is certifiably obsessed with fruit preserves.
